Mexican Lasagna



 This meal is super easy and super delicious! It's definitely a new staple item in my menu rotation. 

Mexican Lasagna
Ingredients

2 10oz cans of cream of chicken

1 10oz can of dice tomatoes and green chilies 

12 6in corn tortillas

3 cups of cooked chicken

1 cup shredded Mexican cheese blend



Preheat oven to 350 degrees



Combine the 3 cans and mix them up, then set aside

Chop up the tortillas into bite sized pieces.

Layer 1/3 of the tortillas onto the bottom of a 3 quart pan

Place half of the chicken on top of the tortillas

Then spoon 1/2 the soup mixture on top of the chicken

Repeat layers and top with the rest of the tortilla strips.

Cover and bake for 40 minutes

Top with cheese and bake an additional 5 minutes until the cheese melts

Baseball Wreath

In honor of spring training, I decided it was time to get into the baseball spirit! I was as a charity event last December and saw a wreath like this being auctioned off for...(brace yourself!)...$150! I know. I know....but it's for charity! Whatever! Instead of forking over the money and tax write off, I decided I could definitely make it myself! Thanks to a little lot of help from my husband, I made this adorable wreath for free using supplies around my house and in just 20 minutes!

Supplies needed:
- wire hanger
-14 baseballs
-drill
-ribbon of choice (I used burlap)



Step 1: Beg your wonderful husband to drill holes in the baseballs. Or, do it yourself. Personally, I didn't want to drill off my hand.
Drill pro and hand model extraordinaire, Brandon!

Easy!
Step 2: Straighten out hanger and thread baseball onto wire.
Step 3: Tighten ends of wire together using pliers.
Step: Add bow of choice and admire your neighbors envy!


Simple! Now, time to enjoy another Giants winning season!

Funfetti Cookies

Who doesn't love a little funfetti? I adapted this recipe from sallysbakingaddiction.com and was pretty please with the outcome.

For such a neat freak, I sure am a messy baker!

After quite an adventurous afternoon in the kitchen, these tasty little treats were a nice ending to a long day! You could really use any type of sprinkle and make the cookies specific to a season or holiday. 

Here's the recipe! Enjoy!
*Funfetti Cookies*
  • 1 and 1/4 cup all-purpose flour
  • 1 box yellow or white boxed cake mix
  • 1/2 teaspoon baking soda
  • 3/4 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1.5 teaspoons vanilla
  • 1/2 cup milk chocolate chips 
  • 1/2 cup white chocolate chips
  • 1/2 cup sprinkles
In a large bowl, sift together flour, cake mix, and baking soda.  Set aside.  In a separate bowl, cream together the butter and sugars on medium speed.  Mix in the egg and vanilla until creamy.
Add the flour mixture to the wet ingredients and mix until just combined. Fold in the chocolate chips and sprinkles.
Cover and refrigerate dough for at least 1 hour, or up to 4 days
Preheat oven to 350 degrees.
Scoop rounded tablespoons of the cold dough onto an ungreased baking sheet. Bake for 10-12 minutes until edges are slightly browned. The centers will still appear very soft, but the cookies will set as they cool.
Allow the cookies to cool on the baking sheet for 4 minutes and transfer to a wire rack to cool completely.

Number of the Day!

In my class, we just started doing a "number of the day" activity in the mornings. We chose the number based off of the current date. Students take turns calling on each other to fill out the information. I love this idea and got it from the fabulous website, www.teachespayteachers.com from this specific genius teacher! The best part...the download is FREE ! I hope you can utilize this in your classroom or home as well!

Chicken & Spinach Pasta Bake

Loved this pasta dish I made last week! It was super simple and tasted great!

Ingredients:
2 cups pasta noodles (any noodle will do!)
4 boneless, skinless chicken breasts
olive oil to liking
1/4 cup garlic powder
1 tsp. salt
5 cups fresh spinach, chopped
1/4 cup white wine
2 1/2 cups mozzarella cheese
1 1/2 cup pasta sauce

Directions:
1. Preheat the over to 350.
2. Boil water with salt and pasta noodles.
3. While the pasta is cooking, cook chicken using olive oil and garlic powder.
4. Prepare spinach.
5. Once the chicken is browned, add in chopped pasta and wine.
6. After chicken and pasta are finished, pour into casserole dish.
7. Top with sauce and cheese.
8. Bake for 25 minutes and enjoy!
