Salty Sweet Treat

I was browsing Pinterest for a great dessert for a BBQ. I needed something quick, easy, and that could hold up in the heat. These "Buckeye" bites were the perfect solution! Nothing fulfills my salty sweet cravings like the combination of pretzels, peanut butter, and chocolate! Thanks sweetpeaskitchen.com  for this tasty treat!
Ingredients:
  • 1 cup creamy peanut butter
  • 2 tablespoons softened butter
  • 1/2 cup powdered sugar
  • 3/4 cup brown sugar
  • Pretzels
  • 1 bag semi-sweet chocolate chips
Directions:
  1. Line a baking sheet with wax paper and set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat peanut butter and butter until combined. Scrape down bowl, add sugars and beat until combined. You should be able to roll the mixture into balls without sticking to your hands. If needed, add more powdered sugar until you reach a consistency that is easy to roll.
  3. Roll the mixture into small balls, about 1 teaspoon of mixture for each ball, and place on prepared baking sheet. Sandwich the balls between two pretzels and place in the freezer for 30 minutes.
  4. Melt the chocolate in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat. Dip each pretzel bite halfway into the melted chocolate and place on the prepared baking sheet or drizzle with chocolate. Chill in refrigerator until chocolate is set.

Kale & Roasted Red Pepper Pasta Bake

I pretty much love anything that has pasta and tons of cheese in it. Case in point, this scrumptious recipe from Baker by Nature .


Ingredients:
1 pound bow tie pasta, cooked al dente
2 tablespoons olive oil
1 medium-sized yellow onion, diced
1 large roasted red pepper, sliced into thin strips
1 pound kale, ribs discarded and chopped
4 cloves garlic, minced
1/2 teaspoon crushed red pepper
2 cups of your favorite marinara sauce
salt and pepper to taste
1 cup ricotta cheese
1 cup shredded mozzarella
2 tablespoons fresh parsley, roughly chopped (optional)
Parmesan cheese for sprinkling, optional
Instructions:
Bring a large pot of salted water to boil. Add pasta and cook for 7-8 minutes, or until al dente. Drain and set aside. Don’t over cook pasta or your final result will be soggy noodles.
Heat oil in a large skillet over medium flame. Add onions, peppers, and kale, and cook, stirring occasionally, for about 10 minutes, or until the kale has softened and the onions have lightened in color. Add garlic and crushed red pepper, and cook for another 2 minutes. Stir in marinara sauce, then remove pan from heat.
Preheat ovens broiler.
Stir cooked noodles into the sauce mixture, then pour mixture into a very large, deep, baking dish. Spread ricotta cheese over the top of the noodle mixture, then sprinkle with mozzarella. Place baking dish in the oven on the middle rack, and broil for 5-6 minutes, or until the lid of cheese is melted and lightly golden.
Spoon pasta mixture onto plates, sprinkle with parsley and parmesan, and serve once!

No Bake Oreo Truffles

My new favorite dessert! I can't even explain how incredibly easy these are! Only THREE ingredients!They're bite size pieces of heaven!  Thank you chef-in-training for this fabulous recipe! 
Ingredients:
    1 package Double Stuffed Oreos
    4 oz Cream Cheese you may add up to 8 oz, I just like the consistency best with 4 oz.
    2 bags white chocolate chips
Instructions:
    Chop Oreos up finely in a food processor. Save some of the finely crushed Oreos for garnish later and set it aside. You don't need too much.
    With a spoon, mash softened cream cheese and crushed Oreos until well combined.
    Roll into 1" balls and place on a wax covered cookie sheet. Put in freezer for 15 minutes.
    While balls are in freezer, melt chocolate according to directions, usually 1-2 minutes.
    Pull the Oreo Truffles out of freezer, and dip into chocolate. I used two spoons t to dip. Garnish with reserved Oreo crumbs before the chocolate sets up.
    Let chocolate set, refrigerate and enjoy!

Throwback Thursday ~ Brownie Fruit Pizza

Brownie Fruit Pizza

With summer around the corner, nothing cheers me up like a good fruit and chocolate dessert combo. Brownie fruit pizza is the perfect solution!
 
Simply bake brownies using your preferred method. I used a box mix and added a few chocolate chips! For the frosting, combine 8 oz cream cheese, 1/2 cup sugar, and 1 teaspoon vanilla and blend until creamy. Cut up some fresh fruit to add to the top, and you're done! 
Yum! Melts in your mouth!

Working Mom Essentials

After being back at work for a few weeks, there are a few things that I quickly realized are daily essentials. 

1. Robe- My baby loves to spit up. I wear a robe every morning while I'm getting ready, up until I buckle her in the car seat and we leave. It's like a protective cloak from her fabulous spit up!  
2. Vitamin B-Complex- I carry these vitamins in my purse and take a few whenever I feel like I need a little boost of energy!
3. Infinity Scarf- Have you ever gone to work with spit up/drool/poop/food on you? Just throw on scarf and you're set to go! 
4. Dry Shampoo- LOVE this stuff! Days when you don't have time to wash and dry your hair before work, you can simply spray some dry shampoo in it, style it, and you're beautiful as ever! 
5. Hair Ties- I really love these cute elastic hair ties because you can wear them on your wrist throughout the day as a cute bracelet and throw your hair up when needed. I especially love these because they don't dent or crease your hair like traditional hair bands. 
6. Coffee- Before I had a kid, I never ever drank coffee. Now, I start my day with a big cup! Life saver!
7. Baby Wipes- I always have a travel pack in my purse. Baby wipes are just a great multipurpose tool to have with you at all times.
8. Water Bottle- I really love this one handed water bottle because it doesn't spill or open unless you push down on the lever. Life is busy and you need to make sure you're taking care of yourself and staying hydrated throughout the day!
9. Under Eye Concealer- Let's face it, those dark bags under your eyes are now permanent. It's time to invest in some great under eye concealer before your co-workers start telling you that you look completely exhausted!
